- 1 small brown onion chopped finely
- 1/4 cup low-fat plain yogurt (60ml)
- 2 large red peppers, halved
- 1 teaspoon chopped fresh chives
- 1 cup of vegetable juice
- 1/2 teaspoon olive oil
- 1 cup cup chicken stock
- 1/2 teaspoon sugar
- 1 cup water
You need to grill the red peppers until the skin starts to blister. Then peel the skin and then chop it into small pieces. In a saucepan, heat oil and fry lightly red peppers and onions until they are soft. Then put in vegetable stock and water and bring to a boil. Cover the lid and again boil it for another 15 minutes. Put the sugar in and stir. When serving the soup drizzle it with chives and yogurt.
